Grapes were harvested during the cool of the night to retain freshness and varietal character. Then they were destemmed and crushed into a pneumatic press to be gently pressed to extract juice. Then the juice was clarified before being inoculated with specifically chosen yeast strains designed to bring out the varietal characters of the wine. Fermentation was carried out in a stainless steel tank at cold temperature 14-15 C which allows a long fermentation to retain freshness and varietal aroma. Furthermore, the wine was stored in stainless steel tanks and stirred on lees to produce mid palate complexity and to create texture and mouthfeel before being fined, finished, and bottled.

Nose:

Wine is offering an attractive bouquet on the nose. Lemon-zest, nashi pear, stone fruits like nectarine and peach accompanying with subtle tropic fruit aromas like lychee and passion fruit.

Palate:

Vibrant and refreshing acidity, flavours of stone fruit and citrus. Perfect for summer!

Food that complements this wine: Greek salad with pickled shrimp, coconut poached chicken with a mango and wild rice salad.

Chardonnay grapes were harvested during cool of the night to retain freshness and varietal character. The grapes were destemmed and crushed into a pneumatic press to be gently pressed to extract juice. Then the juice was clarified and fermented spontaneously with wild yeasts that are naturally presence on the berries in order to have complex bouquet in wine. Fermentation was carried out in a stainless steel tank at cold temperature 14-15 C which allows a long fermentation to retain freshness and varietal aroma. French oak had been integrated to the wine during maturation to improve complexity. Stirred on lees to create texture and mouthfeel, before being fined, finished and bottled.

Complex with fruity and buttery notes. Like pear, quince, date & citrus blossom accompanying with subtle fresh brioche aromas.

Palate:

Crispy and round on palate with tropical fruit flavours supported by oak derived charry characters. Long and elegant finish

Deep River Shiraz

89% Shiraz, 7% Viognier, 4% Petit Verdot

After night harvesting, grapes were crushed into static fermenters. After a brief cold soak to extract colour and flavour, the must inoculated with Rhone Valley style yeast strain. Controlled fermentation occurred over ten days, commencing at 24°C reducing to 20°C. Gentle Pump-overs occurred six times daily to maximise the extraction of colour whilst retaining a soft juicy palate structure. Pump-overs were reduced to twice daily towards the end of fermentation to minimise seed tannin extraction. To avoid any harsh tannins and bitterness only free run and first pressings were used in this blend. After pressing, the wine was settled for three weeks before racking onto new French and American oak for 6 months.

Deep red with purple hues.

Nose:

Ripe cherry, blueberry and mulberry aromas with spicy notes like black pepper and accompanied with subtle tobacco, caramel and lightly roasted coffee beans.

Palate:

This full-bodied Shiraz has a good length on the palate and is showing fresh and rich fruit driven flavours along with hint of liquorice notes.

Food that complements this wine: Roasted leg of lamb or Robust Italian pasta dishes.

Nose:

Intense wild berry aromas with pepper and a hint of oak.

Palate:

Strong ripe plum and berry flavours perfectly marry the subtle oak characters. Good length Shiraz with a velvety tannin finish.

Serve at 15°-18°C now or with careful storage may enjoyed for up to seven years.

Food that complements this wine: Eggplant parmigiana, braised ox cheeks with mustard butter, meat pie.

Harvested during the cool of the night to retain freshness and varietal character, the Chardonnay and Viognier were processed separately. Both were de-stemmed and pressed gently in an airbag press to release juice without extracting too much tannin.

The juices were clarified before being inoculated with specifically chosen yeast strains designed to bring out the varietal characters of the wines.

The wines were then stored in stainless steel and stirred on lees to create texture and mouthfeel before being blended together, fined, finished and bottled.
