Harvested during the cool of the night to retain freshness and varietal character, the Chardonnay and Viognier were processed separately. Both were de-stemmed and pressed gently in an airbag press to release juice without extracting too much tannin.
The juices were clarified before being inoculated with specifically chosen yeast strains designed to bring out the varietal characters of the wines.
The wines were then stored in stainless steel and stirred on lees to create texture and mouthfeel before being blended together, fined, finished and bottled.
Crooked Mick is a bushman from Australian folklore who lived in the mythical Speewah. A giant of a man, some say he could shear a massive number of sheep in no time flat, kick crocodiles up to the moon and move mountains. Tall tales or not, Crooked Mick is a legend as are the wines from McLaren Vale.
Tasting notes
Colour:
Light straw with a green hue.
Nose:
Strong varietal aromas of apricot, nectarine and orange blossom.
Palate:
Fresh acidity and creamy mouth with flavours of stone fruit and honeydew melon. Good length and mineral finish.
Serve at 6°-10°C now or with careful storage may enjoyed for up to three years.
Food that complements this wine: Honey roasted chicken and figs; poached pear and semolina custard cake; potato and fennel gratin.
